2015 Gemini

smallgeminiComposition: 78% Semillon 22% Sauvignon Blanc

Harvest: The grapes were harvested  on August 20, 2015 with 22.4 degrees average brix, 0.68 total acidity, and 3.40pH

Fermentation: 100% stainless steel.

Oak Aging: 5 months in French oak, 20% new / 80% 1 to 2 year old Ailler from Treuil.

Organic: All fruit is organically grown in our estate vineyard.

The grapes were picked together, whole-cluster pressed, and co-fermented in a stainless-steel tank at 45 degrees F for two weeks. The wine finished primary fermentation in barrel and aged sur-lie for five months with monthly lees stirring. The Gemini was aged in French oak barrels to lend structure and depth without overwhelming the wine’s delicacy.

The 2015 Gemini is a rich straw color in the glass with golden undertones. The aromas are broad and layered, with apricot, mandarin orange, and a core of wet stone. The mouth is weighted and structured, with volatile flavors of Meyer lemon, fresh almonds, and pineapple. The finish lingers with a delicate note of white flowers. The result is a tremendously food-friendly blend which should age brilliantly and continue to wow for years.

2013 Cabernet Sauvignon

Composition: 94% Cabernet Sauvignon, 6% Merlot

Harvest: The Cabernet blocks were harvested in five separate passes mid October

Oak Aging: 22 months in 50% new French oak barrels from Treuil cooperage (i.e. Aillier and Troncais).

Organic:  All fruit is organically grown in our estate vineyard.

The 2013 Volker Eisele Family Estate Cabernet Sauvignon is a blend of vineyard blocks from throughout the entire estate. Varying terrain, different clones, and different rootstocks produce a patchwork of flavor identities between the vineyard blocks, creating a blend that is essentially a snapshot in time of a dynamic, ever-changing vineyard. During the fall of 2013, each individual vineyard block was monitored for ripeness, and picked when the grapes had reached their full expression of ripeness.

In the glass, the 2013 Cabernet Sauvignon is a deep burgundy, with subtle purple undertones. Extroverted aromas of fresh raspberries, milk chocolate, and malted vanilla explode from the glass. In the mouth, the wine is round and lush, with dense layers of blackberry, black cherry, and the subtle spiciness of charred French oak. The tannins are broad and creamy, and linger well into the lengthy, sweetly smoky finish. ~Molly Lyman, Winemaker

An elegant, juicy 2013 Cabernet Sauvignon from Chiles Valley has 6% Merlot in the blend. The wine has a dark ruby/purple color, sweet tannin, loads of raspberry, strawberry and black cherry fruit, a touch of underlying soil notes, medium to full body and a supple, velvety mouthfeel. This is classy, elegant and seductive Cabernet Sauvignon made in a feminine style. Drink it over the next 10-12 years.

2015 Terzetto

Composition: 1/3 Cabernet Sauvignon, 1/3 Cabernet Franc, 1/3 Merlot, co-fermented

Harvest: The grapes were harvested September 24, 2015.  Brix:  25.2,  Acidity:  0.67,  pH:  3.52

Oak Aging:  22 months in 60% new French oak barrels from Treuil cooperage (i.e. Aillier and Troncais).

Organic:  All fruit is organically grown in our estate vineyard.

This is a wine of elegance and finesse that fulfills our intentions; to reflect the style of wine that typifies Bordeaux varietals without any one dominating. The grapes from each varietal going into this dynamic wine are selected from specific areas throughout the vineyard based on meticulous planning and consistent farming techniques to encourage synchronous ripening. When the intersection of the three varietals’ ripeness is optimized, all varietals are picked and fermented together.

The 2015 Terzetto is a rich, deep red in the glass, with expressive aromas of boysenberries,
blueberries, cranberries, and freshly roasted coffee with a hint of white pepper. In the mouth, the
creamy tannins frame a host of mouth-filling volatile flavors – blackberries, dark chocolate, a touch
of pipe tobacco, and the lingering sweet smoke of toasted French oak.
