2015 V, Cabernet Sauvignon

V Cabernet Sauvignon

The V, Cabernet Sauvignon is a special collaboration born out of a desire to take high quality wine grape growing to its highest potential. The vines from our steepest terrain were heavily thinned to one cluster per shoot, dry farmed and a meticulously managed canopy ensured even ripening. The resulting tiny berries produced a powerhouse of flavors. This is a wine that truly began in the vineyard.

Composition: 100% Cabernet Sauvignon

Harvest: The grapes were harvested September 24, 2015 with 25.4 degrees average brix, 0.53 total acidity, and 3.68pH

Oak Aging: 22 months in 60% new French oak barrels from Treuil cooperage (i.e. Ailler and Troncais).

Organic: All fruit is organically grown in our estate vineyard.

In the glass, the 2015 V, Cabernet Sauvignon is a deep clear burgundy red, with near purple edges. This wine is dense, layered and loaded with aging potential. The wine presents with Bing cherry, classic cassis, graphite, and an exotic touch of Chinese five spice powder. In the mouth, the wine’s massive structure layers with flavors of espresso, dark bittersweet chocolate, and blackberries. The finish is reminiscent of deeply toasted French oak.

2015 Las Flores, Cabernet Sauvignon

The fruit for the Las Flores, Cabernet Sauvignon comes from a section of our vineyard called the Las Flores block, named by the Nevarez family, which has been farming the land with us since 1974. The mustard that grows in the Las Flores block every spring, blooms a more brilliant yellow in this field than anywhere else within our vineyard.

Composition: 100% Cabernet Sauvignon

Harvest: The grapes were harvested October 1, 2015 with 25.3 degrees average brix, 0.63 total acidity, and 3.57pH

Oak Aging: 22 months in 55% new French oak barrels from Treuil cooperage (i.e. Ailler and Troncais).

Organic: All fruit is organically grown in our estate vineyard.

The Las Flores, Cabernet Sauvignon was named for the dense expanse of brilliant yellow wild mustard that carpeted the block. The terrain of the Las Flores block covers the slope of the Volker Eisele Family Estate where the hillside joins the valley floor – the wine that this block grows embodies this unique juxtaposition – not hillside, not valley floor – perched somewhere in between. The 2015 Las Flores, Cabernet Sauvignon is a deep, shimmering burgundy in the glass. Its
aromatics are extroverted from the start, with juicy blackberries, classic creamy cassis, and a wild sarsaparilla spice lingering behind the bright fruit. In the mouth the aromas have an almost floral quality, mingling with flavors of espresso, dark chocolate covered cherries, and a touch of saddle leather. The lengthy finish is reminiscent of cinnamon and nutmeg.

2014 Alexander, Cabernet Sauvignon

On the slopes of Volker Eisele Family Estate, Alexander, the second generation Eisele to tend the vineyard, has developed his passion for perfection. He understands that quality begins with each individual vine. It is with a unique two-acre hillside block, planted to Cabernet Sauvignon in 1976 that he has reached the ultimate, producing the spectacular fruit which goes into the Alexander wine. While yields are low due to precise cluster selection, the quality is extraordinarily high.

Composition: 100% Cabernet Sauvignon

Harvest: The grapes were harvested September 13, 2014, with 24.9 degrees average brix, 0.60 total acidity, and 3.72pH

Oak Aging: 21 months in 70% new French oak; Aillier and Troncais from Treuil.

Organic: All fruit is organically grown in our estate vineyard.

In the glass, the Alexander Cabernet Sauvignon is a deep burgundy, with brilliantly red edges. The nose is expressive with creamy saddle leather, rich cassis, ripe blackberries, and violets, with a touch of nutmeg and black pepper. In the mouth, the wine is round and lush, with weighty, broad tannins and flavors of creme de cassis, black cherry, and vanilla bean layered into a frame of well-integrated oak. The extremely long finish is of light sweet oak char and toasted barrel spice.

The 2014 Cabernet Sauvignon Alexander has an opaque purple color, notes of graphite, toasty oak, rich concentrated, medium to full-bodied flavors, a long finish and a youthful character. This wine has plenty going for it … and will evolve for 15-20 years.
